Vegan herring is not only easy to prepare, but also very tasty with this recipe.

My vegetable herring is made from peeled and chopped eggplant that has been left overnight in a vinegar solution. Then I marinated the eggplant herring in a nice and tasty sauce – in this case, a mustard sauce.

Here is my favorite recipe for vegetable herring with mustard sauce, which is easy to make but takes about 2 days!

Before you start the recipe, there are a few things to keep in mind. Here are some tips for success with vegetable herring:

To get the right texture, I recommend peeling the eggplant before cooking.

If you leave the shell on, the vegetable bridge has a different texture, not the same as herring.

Prepare 2 days before serving

Vegetable herring tastes best if you prepare it 2 days before serving.

First, you should spread the vegetable herring in one layer in a pile, after which I recommend soaking it in the sauce overnight before serving.

Here I am writing a recipe for a mustard sauce that you can add to your vegetable chiles.

Anyway, if you don’t like mustard sauce, you can skip the sauce part and just make vegetable herring.

Eat the eggplant salad as it is or mix it with any sauce.

Season with Dijon mustard and white wine vinegar

As for the mustard sauce, I recommend starting with 0.5 tbsp of each, then taste and add more as needed.

A nice and simple recipe for eggplant herring with mustard sauce, which takes about 2 days to prepare.

Eggplant:

  • 1 eggplant
  • 1 carrot
  • 0.5 red onion
  • 3 dl of water
  • 2 dl powdered sugar
  • 1 dl vinegar (12%)
  • 4 bay leaves
  • 10 allspice grains

mustard sauce:

  • 1 dl rapeseed oil
  • 3 tablespoons of chopped dill
  • 2 tablespoons of coarse mustard seeds
  • 1 tablespoon granulated sugar
  • 0.5-1 tbsp Dijon mustard
  • 0.5-1 tbsp white vinegar

Instructions

Eggplant:

  1. Boil salted water in a pot.
  2. Peel the eggplant and cut it into 1 cm thick slices, then cut into herring-shaped pieces. Add to the pan and let it cook for 10 minutes.
  3. Drain in a strainer and let the brinjals drain well.
  4. Peel and chop the onion and carrot.
  5. Boil water, granulated sugar, vinegar, onion, carrot and spices in a pot. Remove from the plate and let the layers cool slightly.
  6. Place the eggplant in a jar with an airtight lid. Pour over the base and let it set in the fridge for a day.

mustard sauce:

  1. Combine the mustard, granulated sugar and vinegar in a bowl. Whisk in the rapeseed oil in a thin strip.
  2. Stir in the chopped dill and season with salt and pepper.
  3. Let the eggplant herring drain well and mix in the mustard sauce.
  4. Transfer to an airtight jar with a lid and let it set in the fridge overnight.

1. Peel the eggplant and cut it into 1 cm thick slices. Then cut into pieces like a herring.

4. Peel and chop the onion and carrot. Put in a pot with water, vinegar, sugar and spices.

After cooking, set it aside to cool.

4. Drain the eggplant in a colander. Remove the bay leaves, allspice and carrots.

6. Mix well so that all the vegetable herrings are covered with the sauce.

7. Store in a jar with an airtight lid. Store in the refrigerator overnight.

Vegetable salad is a fish-free alternative to classic herring, which can be modified by mixing with different sauces.

My vegetable slaw is made from peeled, sliced ​​and cooked eggplant. It is then poured over a layer of vinegar to mimic the texture and flavor of herring.

You can easily change your vegetable herring by mixing it with different sauces. In this recipe, I give the ingredients and instructions for the mustard sauce, but you can choose another sauce if you want.

Vegetable herring can be served at an Easter meal, a Christmas meal, a midsummer buffet or any other time you feel like aubergine salad.
