Passion Mousse Cake is the perfect cake to bake when you want something sweet and sour. My cake is made with only 6 ingredients without pre-bought passion fruit juice to avoid unnecessary additives.

Before you head to the grocery store and start making a recipe, there are a few things to keep in mind.
Here are some tips for the success of Passion Mousse Cake:
Use ripe passion fruityour
It’s easy to tell if a passion fruit is ripe. The raw fruit has a smooth skin that shrinks when ripe and edible.
However, the fruits must not be too shriveled so that they become old and dry. You can tell by the weight of the passion fruit.
If the fruit is very pale, this may be a sign that the pulp and seeds have dried out.

I’m in Cake, I use 2 passion fruits mixed (with a stick blender) in 2 dl of water, which I filter to make my own “passion fruit juice”.
It doesn’t taste ready, but is much healthier without all the additives.

I usually leave it for a few hours before serving, but it can also be prepared a day in advance.
Just make sure you cover it properly and that there is nothing in the fridge that smells strongly.
If you have, for example, half an onion in the fridge, completely uncovered, the smell and taste of the onion can enter the cake. Remember to store anything that smells in an airtight container.

Depending on how long you let the cake sit and harden in the fridge, the passion fruit mirror may break a little when you remove the edge of the springform pan.
Be very careful and take it slow. If you see it sticking, you can pry it off the edge with a knife.

Instructions
at the:
- Combine digestive biscuits in a food processor or crush by hand.
- Melt the butter and mix with the cake crumbs.
- Press the cake and butter mixture onto the bottom of a springform pan (about 25 cm in diameter).
- Store in the freezer for 30 minutes.
Passion Fruit Mousse:
- Place the gelatin leaves in a bowl of cold water (5-10 minutes).
- Drain the passion fruit and put it in a thin strainer over the cup.
- Press out as much liquid as possible with a spoon (save the pulp and seeds for the passion fruit mirror).
- Pour the passion fruit juice into a saucepan with the sugar. Let it boil for 1 minute.
- Squeeze the gelatin leaves well and add to the mixture. Stir until they dissolve in the hot liquid. Keep aside and let cool.
- Whip the cream into a fluffy foam (note very hard). Add little by little to the juice mixture and mix gently.
- Spread the mousse in the mold and put it in the fridge for 1 hour.
Passion Fruit Mirror:
- Place the gelatin leaves in a bowl of cold water (5-10 minutes).
- Mix 2 passion fruits in 2 dl of water. Filter the pulp and seeds. Or use 2 dl of prepared passion fruit juice.
- Pour the liquid with the powdered sugar into a saucepan (if you use ready-made passion fruit juice, no need to add sugar).
- Let it boil for 30 seconds and then remove the pot from the stove. Squeeze the gelatin leaves and pour into the hot liquid.
- Stir until the gelatine leaves dissolve, then add the remaining pulp and seeds from the 10 passion fruits you used in the mousse.
- Keep aside and let it cool down a bit.
- Pour the mixture over the mousse. Allow to harden in the refrigerator.
- Garnish with passion fruit and lemon balm before serving.

1. Put the cookies in a food processor and mix until you get small crumbs.
2. Melt the butter in a saucepan and mix in the cake crumbs.
3. Press the mixture into a mold with a removable edge (diameter approx. 25 cm). Store in the freezer for 30 minutes.
Passion Fruit Mousse:
1. Put the gelatin leaves in a bowl of cold water.
2. Strain the Passion Fruits into a fine strainer on top of the bowl. Stir and press with a spoon to remove as much liquid as possible.
Save the seeds and pulp for the passion fruit mirror.
3. Pour the liquid into the pot and add the sugar. Let it boil for 1 minute.
4. Take the pot off the plate, squeeze the water from the gelatin leaves and transfer to the pot. Stir until they dissolve.
Let cool (I usually put in a bowl to speed it up).
5. Whip the cream into a fluffy foam.
6. Mix the passion fruit mixture (one piece at a time) carefully with a spoon.
7. Mix until you get a smooth passion mousse.
8. Spread the mousse in the mold. Cover and refrigerate for 1 hour.
Passion Fruit Mirror:
1. Put the gelatin leaves in a bowl of cold water.
2. Note: If you are using ready-made passion fruit juice, you can skip this step.
Mix 2 passion fruits in 2 dl of water. Filter out the seeds and pulp.
2. Pour the liquid and 2 tablespoons of granulated sugar into the pot (if you use ready-made passion fruit juice, no need to add sugar). Stir and cook for 30 seconds.
3. Remove from the plate and mix in the gelatin leaves (squeeze out the liquid first). Stir until dissolved and then add the seeds and pulp of the passion fruit used in the mousse.
Keep aside and let it cool down a bit.
4. Pour the mixture into the mousse pan. Store in the fridge and let cool for a few hours.
Remove just before serving and garnish with passion fruit and lemon balm. serve immediately.

My Passion Mousse Cake is made from about 14-15 passion fruits to give it flavor, and without ready-made passion fruit juices, so that there are no unnecessary additives in the cake.
Since I use a lot of passion fruit in this recipe, I recommend making the cake at the passion fruit price, otherwise it can get quite expensive!
