Mayonnaise can be made from just two ingredients; Egg yolk and cooking oil. Anyway, in my recipe I flavor the mayonnaise with white wine vinegar, Dijon mustard, freshly squeezed lemon juice, salt and sugar.

How long does homemade mayonnaise keep?
If you store it in an airtight container, it will keep for a few days in the fridge.
If mayonnaise has been at room temperature for a long time, its shelf life will be shortened, as well as those pushed with your fingers.
My mayonnaise is cracking, what am I doing wrong?
The main reason mayonnaise splits is because you add too much oil at once. You have to pour drop by drop and hit hard.
Another reason it cracks is because you are using cold eggs. It is best to use room temperature ingredients.
how to save broken mayonnaise
If the mayonnaise cracks, you can save it by mixing 1 egg yolk with 0.5 tbsp of water and a splash of white vinegar in another bowl.
Pour the mixture drop by drop into the torn mayonnaise drop and beat vigorously.
Can olive oil be used?
My best suggestion is to use canola oil or sunflower oil to make your own mayonnaise. Olive oil can give mayonnaise a bitter taste, which is not so good.
If you still want to use olive oil, you can use half light olive oil and half sunflower or canola oil.
Can you make mayonnaise with a stick blender?
I haven’t tested it, but I’ve heard it should work.
If you want to use an immersion blender, my best suggestion is to use a narrow and tall bowl and blend until you have a thick and creamy mayonnaise.

I never throw food away and I think it’s important to take care of everything. So save the egg whites and add them when making omelets or scrambled eggs.
Egg whites can be used to make a chewy meringue without the slightest drop of yolk.
Nice and simple recipe for mayonnaise, which makes about 3 dl. The recipe takes about 15 minutes to prepare.
