Asian cucumber salad is, for example, a really good side dish with chicken, salmon and cod. This is a nice and fresh cucumber salad seasoned with rice wine vinegar, chili, fish sauce, sesame oil and lime.

Tips for Success with Asian Cucumber Salad
Before you go shopping and start making an Asian cucumber salad, there are a few things to keep in mind. Here are some tips for success with the recipe:
I usually always put the thinly sliced cucumbers between paper towels and gently press them with my hands.
When you do this, you get some of the liquid out of the throat, allowing it to soak up a little extra of the other ingredients – which in turn gives more flavor.
Lots of chili for an Asian cucumber salad
How strong you want your Asian cucumber salad is up to you. Some people don’t like it strong and others like the heat of the food.
Depending on how big the chili is, you can use 1-3 pieces of chili in this recipe. I love spicy food and usually eat 2-3 chilies.
If you don’t like it strong, you can start with half a chili and add more if needed.
Let stand for at least 1 hour before serving
In order for the cucumber to absorb the good flavors of the sauce, it is important that you let it sit in the refrigerator for at least 1 hour before serving.
But you can let it sit for a few hours to get a little extra soaking time!

A good and easy recipe for an Asian cucumber salad that takes about 20 minutes to prepare. Refrigerate for at least 1 hour before serving.
- Cut the cucumber into thin slices with a cheese grater or mandolin. Put the cucumber between a paper towel, squeeze lightly to remove the liquid.
- Peel the chilies and chop them finely.
- Mix rice vinegar, granulated sugar, salt, lemon juice and sesame oil in a bowl.
- Add chopped cucumber and chopped chilli.
- Shake and cover. Refrigerate for at least 1 hour before serving.
1. Mix the sauce ingredients in a small bowl.
2. Cut the cucumber into thin slices.
3. Place the cucumber between a paper towel and squeeze gently to remove some of the liquid.
4. Take the cucumber in a bowl and add the chopped chili and put it on top of the sauce.
Mix well, cover the bowl and let set in the fridge for at least 1 hour before serving.
